I made this gem of a recipe for the second time tonight and man was it good. You can find the recipe over at smitten kitchen. I've been trying to lay off the carbs lately (not completely eliminate them but increase different foods into my diet) so I switched out the couscous for quinoa instead, for that added protein.
Let me just say that normally I'm not crazy about feta or quinoa but this recipe has converted me. I also love the addition of fennel seeds, it adds a lovely flavour to the meal. I made this for my partner and he loved it too. Its also good without being stuffed into the pepper. I can't wait to have the leftovers for my lunch tomorrow!
